A summery lime drink with coconut, what more could a girl ask for?

This is a drink I got out of a magazine. It's really tasty and it made me use sugar, which is something I don't really want to do, but what the heck! It's okay, because the result is great!

They shared this recipe, together with a little story about a Dutch food truck. Well, I say food truck, it's actually a juice truck. How awesome would that be... I can definitely see the appeal. Though not on all days, so I'll leave it to the professionals and will just visit one from time to time.

Anyway, I tried this without crushed ice (or any form of ice) first, out of necessity. I simply did not have ice. It tastes great like that too, but my boyfriend prefered the iced version of this drink. Let's talk recipe. You're going to need a blender.

Ingredients
4 Limes
80g Sugar
120ml Full coffee milk or condensed milk
200ml Coconut milk
Crushed ice or ice cubes

Directions

  1. For a festive look, cut off four slices of a lime and keep them seperate. Cut up the other limes, including the peel.
  2. Put the limes, sugar and 400ml ice cold water in a blender and blend for a while.
  3. Pour the blended drink through a sieve to seperate the lime pieces from the drink and throw those away.
  4. Mix the drink with the coffee milk (or condensed milk) and the coconut milk (Optionally, add some rum).
  5. Fill up four glasses with about 3/4 crushed ice and pour over the lemonade.
  6. Make extra pretty by putting a slice of lime on each glass rim.
  7. Serve with a straw.

Enjoy!

I didn't go all fancy with a lime slice. It tasted pretty great without one too!

This sounds amazing.

It really was! I love these magazines. A few grocery stores release them once a month and I always find a few recipes I want to try. Most of the time, I end up tweaking them a bit (or just mixing and matching), but they always inspire me :D
This particular one definitely inspired me a lot and I really like this recipe (and the other two I tried on the same day).

I like coconut drinks. Very refreshing during summer time.

I never really had them much before, but this has changed that! I'm definitely going to be using it more in the future :-)
