This is one of my favorite meals to make and eat. It is very flavorful and makes you think you are eating something lite and healthy, even though it is lasagna.
I started by boiling the noodles and shocking them in an ice water bath. Then I sautéed the mushrooms till they were cooked well.
I put about a half cup of marinara sauce in the bottom of a 9 x 9 pan lined with tin foil. Then I put down 3 noodles topped it with more sauce, cheese and the mushrooms. Then I sautéed the butternut squash, broccoli and zucchini.
Layered that with more sauce and cheese.
Then I sautéed the spinach and layered that with more noodles, sauce and ricotta cheese.
Topped it off with more noodle, sauce, cheese, artichokes, roasted red peppers and parmesan.
The great thing about this dish is you can use any veggies you have.
The combination of the flavors of the veggies, sauce and cheese go real well together.

Here is what I used in this tasty veggie lasagna:
11 Lasagna noodles- cooked 13 minutes
5-6 cups Marinara Sauce
3 cups Cheddar/Jack Cheese
2 cups Mozzarella
3/4 cup Parmesan
6 oz Ricotta Cheese
3-4 cups Mushrooms, sliced
2-3 cups Butternut squash, diced small
1 cup Broccoli, chopped
1 each Zucchini, diced
3 cups Spinach, rough chop
24 each Artichoke, quarters
1/3 cup Roasted Red Peppers, diced
Layer, bake and enjoy.
We usually bake it in the oven 400 degrees for 10 minutes then refrigerate overnight or a few hours to let everything gel together. Then we remove it from the pan and slice it into individual portions. Heat it in the microwave for 2-3 minutes and back in the oven 400 degrees for 8-10 minutes.
