What is Up, Hive Fam?! 😘
It is sooo hot here in Cape Town, and I am still on holiday, so I'm really not in the mood for cooking or long food prep. I've been making food in bulk, and keeping it in the fridge for days like today, when I just don't feel like cooking.
These Vietnamese Rice Paper Rolls are one of my favourite healthy lunches. They are super versatile, and can be made with any filling.
Today, I chose to make a super crunchy veggie filled roll, which I will have with soy sauce and probably a drizzle of mayo.

INGREDIENTS:
Makes Six
🌷6 Vietnamese Rice Paper Wraps
🌷90g Cucumber, deseeded
🌷90g Red Pepper
🌷Lettuce of your choice
🌷Spring onion or chives (approx 10g)
🌷50g carrots, grated or chopped finely
🌷Soy sauce for dipping
🌷Sesame seeds for plating
METHOD:
Prep all your veggies. Remember the shape of the roll when cutting everything up - you don't want huge chunks of veg
Once all the veggies are chopped up, set up a little prep station. A bowl of water for soaking the wraps, a space for rolling, and a plate or board for placing the completed rolls on.
Ready? Let's Go!
Soak one wrap in warm water until pliable. Not too long as they can become too soft and tear. The perfect consistency is soft, but with a little firmness still.
Add your filling. You want to keep it close to the edge, and not too much, as these wraps are quite delicate and will tear if they are too full.
Fold over the side closest to you, and fold the edges in.
Roll your wrap, and press the edge down. You can wet it again if it has become a little dry
