@progressivechef's back again for another post where I will be sharing some of my past food creations! These dishes were created during my 15 years career in the hotel industry!

FOOD PORN - My Creations!!! Part 2
Just as a reminder , I have been working as a chef for the last 15 years! And my latest positions have been Executive Chef for two very well known 5 stars hotels in Mauritius!
The Westin Mauritius and most recently Executive Chef of The St. Regis Mauritius!
I also had some working experience in The Maldives, Italy , France , Abu Dhabi and Dubai!
All the plates that you will dicover are the fruits of my hard work and perseverance throughout several years!

Here we go!
Glazed Babonne fish filet with beet and redwine reduction , beet variations
This dish is composed of only 3 main ingredients; Fish filet, red wine and beetroots!
I worked the beetroot in different ways; confit, crispy, tuile and sauce.
The fish filet is cooked in the red wine and beetroot juice reduction!
Roasted duck magret with Sichuan pepper, foie gras bonbon and mango
The duck liver bonbon is made up are various mild spices, mango, herbs and bread.
The duck magret is simply roasted in pan with it's own fat and Sichuan pepper and served with a duck jus!
Lobster and carrots variations
This is another take on the lobster and carrots! I just love combining these two products!
The lobster is poached in a very aromatised broth consisting of lemon grass.
And carrots in different textures! Cooked sous-vide, puree and also a sauce made with carrots!
I just love the color!
Coconut blanc manger and caramel crisp
Time to check out a dessert!
For this lovely dessert, I again used only a couple of ingredients which are quite easy to find anywhere in the world!
Egg white, coconut, sweet potato and sugar! Simply these to get a world class dessert!
The blanc manger is stuffed with a cream made with the sweet potato!
And the white dots are actually a coconut cream and fresh coconut!
One of my all time favorite dessert!
Oyster beignet and celery remoulade
Have you ever had fried oysters!?
Well let me tell you they are just awesome when fried with a light beer batter!
And finish it with a refreshing celery remoulade on top, just wow!
Grilled red mullet , eggplant and tomato with crisp parmesan
Fish and eggplant are one of the best food ever when paired together!
The eggplant is cooked differently as you can see; dried in the oven, puree and grilled!
The red mullet is just cooked on a low temperature and served with some crispy parmesan sticks and kalamata olives!
Wonderful dish!
Indian Delicacy
I will end this post on a sweet note! Yes another dessert for the pleasure of your eyes!
This is the famous gulab jamun sweet from the Indian gastronomy! It is made mainly with milk, fried and soaked in syrup!
I served it in a modern way with a nice coconut ice cream and raspberry jelly!
So here we are my dear friends, the 3rd part of my creations!

Did you ever see pictures of Madre's Restaurant in Los Angeles? It's now closed but the decor was right up my alley!
Yes I know this restaurant, it was owned by Jennifer Lopez but still don't know the reason of it's closure. The decor and the restaurant was really so nice! The photo says it all!
It was indeed beautiful but the food not so much, I think at the right time with the right chefs it would have been a dream!
You see, they did not call me up! I would have done wonders there!Lol!
That would have been trouble and I would have gone broke eating there all the time haha
That duck....oh my goodness! They all look quite delectable but that duck looks amazing!
This dish I infact spent 2 weeks to figure out the best way to present it until I made this final one! Really very satisfying in the end!
Would you eat the celery remouladeon on top of the oyster at the same time, or after... or is it more of a garnish?
Trying to incorporate my sandwich technique here lol? it's too tall to actually eat haha.
Hahaha! Trying to match the tower manwiches man! It's actually a garnish, it's very light and airy! They must be eaten together though!

Had baked oysters in New Orleans. oh man, that place is just amazing for oysters. 40cents at happy hour! also so much other creole type food and really all sorts. Everything is so fresh bc they are right on the Mississippi River
