Crispy chicken skin with salted egg sauce

- Material:
- Chicken skin
- Ginger
- Garlic
- Salt
- 10 tbsp flour
- 2 tablespoons cornstarch
- 1/2 tsp baking powder
- Salt
- Pepper
- Seasoning
- 2 salted egg yolks
- Pure milk to taste
- 1 tablespoon margarine
- Salt
- Sugar
- Pepper
- Garlic powder
- How to make :
- Clean the chicken skin from the fat and then marinate with garlic, salt and ginger that has been mashed.
- After being marinated for 1 hour, heat the oil then coat the chicken skin with a mixture of flour, cornstarch, baking powder with salt, pepper & flavoring.
- Coat the entire surface of the chicken skin with flour until evenly distributed then fry in hot oil until crisp and brownish yellow.
- For the sauce, puree the salted egg yolk then heat the margarine and add the salted egg yolk.
- Stir until smooth then add the whole milk little by little until the texture is thick. Use low heat so it doesn't burn.
- Add salt, pepper, sugar and garlic powder. You can add a little flavor if it's less tasty.
- Serve
