Breakfast Sausage Carbonara
Kids eat it, adults like it. A playful way to combine breakfast with dinner.
| Prep time: 5 minutes | Cook time: 23 minutes | Serves: 6 |
Ingredients:
1 lb Maple Breakfast Sausage- Ground
1 lb Spaghetti Pasta
1 Small Onion
4 Cloves Garlic
3 Eggs
4 tbsp Butter
⅓ Cup Plain Greek Yogurt
1 Cup Shredded Parmesan Cheese
Sea Salt and Fresh Ground Pepper (to taste)
Optional Garnishes:
Green Onion Sliced Thin
Oregano
Directions:
Bring 4 quarts of salted water to a boil. Once the water is boiling, cook the Spaghetti Pasta until almost tender. Reserve 1-2 cups of water from cooking the pasta (to help thicken the final sauce and help finish cooking the pasta later). Set the pasta aside so you can make the sauce. TIP: If you are using gluten free pasta, make sure you rinse it in cool water immediately after removing from the boiling water, or it will turn into one inseparable clump of mess that no one will be able to add a sauce to.
To reduce the number of dishes you have to clean use the pot you just boiled your pasta in to melt the butter and saute the Diced Onion until translucent and slightly caramelized. Then add the Garlic and saute for another 1-2 minutes. Brown the Breakfast Sausage in with the Onion and Garlic. Add the pasta back into the pot, and coat with the Butter and Sausage and stir. Begin to slowly stir in small amounts of the starch water that was reserved from the pasta. Whisk the 3 eggs with the cheese and yogurt in a separate bowl, and slowly stir into the pasta. Stir until the sauce has thickened and the pasta is tender. Keep a very close watch and constantly stir.
Do not overcook with the eggs in the pasta, or it will get chunky like cottage cheese.
Serves 6.

Kids love pasta right? Kids also love breakfast? Here is breakfast pasta! Tons of protein between the eggs, yogurt, and the sausage. This is a kid dinner success every time. The sweet Breakfast Sausage with the creamy and salty sauce hits all the spots and is a great one pot dinner to save time on doing dishes (because face it- no one likes doing more dishes). Even the adults in our house like it topped with fresh herbs and a side of asparagus.
Bonus Tip:
Steam asparagus while cooking the pasta. Put a strainer or colander on top of the pasta over the water and steam asparagus for 4-5 minutes until tender but not soggy. Toss steamed asparagus with extra virgin olive oil and garlic salt. Cooking 2 things at once saves time and dishes (which are a must around here!).
I still have yet to get my kids to eat the asparagus- but I figure they might accidentally go for it if I keep putting it in front of them.
