Romany Creams
Enjoy these cookies with a cup of coffee or tea.
Ingredients:
300 ml boiling water
60 g cocoa
750 g butter
630 g caster sugar
10 ml vanilla essence
825 g cake flour
15ml baking powder
2 ml salt
375 g shredded coconut
500 g dark chocolate
Method:
Mix boiling water and cocoa and allow to cool. Cream the butter and sugar in your mixer until pale in color.
Add the cocoa mixture and vanilla essence and mix well.
Sieve the cake flour, baking powder and salt and add the coconut.
Add the dry mixture to the wet mixture and mix well.
Allow the cookie dough to rest for a couple of hours.
Roll balls the size of a whole walnut and place on a baking sheet that has been prepared with Spray n Cook.
Gently press the balls down with a fork.
Bake for 12-15 minutes at 180 C.
Allow to cool.
Melt the dark chocolate in a bowl over a pot of boiling water and “stick” two cookies together with chocolate.
Place in an airtight container.
