Easy Vegan / Traditional Cookie Recipe
Chocolate Button Drop Cookies
Cookies
2 oz. Unsweetened Chocolate
1 tsp. Vanilla
3/4 cup butter / or ¾ cup Coconut Oil
1 ½ cup sugar / or 1 ½ cup Coconut Sugar
3 eggs / or 3 tsp.water 3 tsp. Flax Seed (pre ground)
2-½ cup flour / or 2 -½ cup Quinoa Flour
Heat Unsweetened chocolate stir until chocolate is completely melted. Add sugar; mix well. Blend in flax and vanilla. Add flour; mix well. Refrigerate 1 hour or until dough is easy to handle.
Glaze
8 oz. COOL WHIP (Do not thaw.)
2 oz. Semi-Sweet Chocolate
Microwave or slow Heat on Stove the COOL WHIP and semi-sweet chocolate in a bowl until chocolate is completely melted and mixture is well blended, stirring after 1 min. Let stand 15 min. to thicken. Spread over cookies. Let stand until glaze is firm.
