Rice is one of the most popular food that almost every family eats in Nigeria. Rice is eaten irrespective of the tribe.
Rice is served in every party. You can make it as white rice and stew, jollof rice, fried rice or even coconut rice, ofada rice etc.
So today I made white rice and fish sauce. Let me take you on how I prepared them.
Ingredients
Rice (2 cups)
Pepper
Oven dried Catfish (cut into pieces)
Pomo (optional)
Salt (to taste)
Maggi(1 cube)
Crayfish (blended)
Vegetable oil ( olive oil is better - low cholesterol)
Onions(chopped)
Water
##Preparation
Boiled rice
Step 1- pour a bowl of water in a clean pot, add the rice (after washing)and put on medium heat cooker. The rice is first parboiled for about 10 minutes to reduce the starch content.
Step 2- salt is added with small amount of water. It is then cooked for 10 minutes till its done.
Fish sauce
Step 1- clean pot is put on medium heat cooker, olive oil is added.
After heating for 2mins, chopped onions are added in the hot oil and gentle stirred to allow the aroma of the onions to come out
Step 2- pour the roughly blended pepper and tomatoes and stir.
Step 3- add salt to taste, maggi and seasoning. Then cook for 5minutes
Step 4- add pomo (I love the crunchy taste), boiled meat (of the kind you like), catfish and stir together. Add the blended crayfish Leave to cook for 5-8 minutes till the sauce is properly cooked.
Note- the soup is properly cooked when there is no water and you can see the oil showing on top.
Voila!! Food is served
