Anchovy curry with coconut paste

Anchovies contain calcium ,iron,magnesium,phosphorus,potassium ,sodium and zinc.Anchovies are a good source of vitamins such as thiamin ,riboflavin,niacin, folate , vitamin C, vitamin B 12 ,vitamin B 6, vitamin A, vitamin E,and vitamin K.It also contains fatty acids.

Here I have served anchovy curry with mashed jack fruit. (recipe of mashed jack fruit is given in one of my previous posts) Instead of jack fruit ,One can use mashed potato or mashed cassava.

I normally cook fish dishes in earthenware pans.

Anchovy curry with mashed jack fruit is an ideal dish for lunch. This is a very tasty dish.

Ingredients:

Anchovy - 200gms

Grated coconut - 1/2 c
Chilly powder - 1 t
Turmeric powder -1/4 t
Coriander powder -1/2 t
Garlic -3 cloves
Ginger -1/4 inch (small piece)
Tomato - 1
Cooking oil -2 T
Shallots - 2
Curry leaves - two stalks.
Salt -to taste.

Method :
Clean Anchovies.
Grind grated coconut,ginger,garlic and turmeric into a paste

Heat the oil in a pan and saute finely sliced shallots.

When it start becoming brown, reduce heat to a minimum and add rest of the powdered ingredients and stir well.
Add the coconut paste and stir.
Finely add cut tomato and fish into this ,then add salt and let it boil.
Curry leaves can be added at this stage.

Reduce heat and simmer on a low heat ,until cooked and gravy becomes thick.
Serve hot with mashed Jack fruit.
