Spicy Chicken roast with potato chips and cooked vegetables

Spicy Chicken roast

Ingredients:

Chicken - 1
Roasted chilly powder - 1 1/2 T
Black pepper - 1 tsp
Turmeric powder - 1/2 tsp
Roasted Coriander powder - 1 t
Powdered aniseed,cinnamon and cardamom - 1 1/2 t
Vinegar - 1 T
Salt - to taste
Ginger and garlic paste - 2 tsp
Cooking oil or dripping - 5 T

Method :
Clean the chicken well and skin and dry it .
Mix the rest of the ingredients and marinade the chicken and leave it for 6-8 hrs.
Preheat the oven to 200 degree centigrade and heat the fat in the roasting tray.
Place the chicken in the hot fat and spoon fat over the breast in between.
Cook the chicken until tender approx.1 1/2 hrs depending on the size of the bird.

Potato chips and vegetables can be prepared in the mean time.
Serve the chicken on a hot ashet and place potato chips , cooked carrot,beans and capsicum round the meat.
