I just prepared this egusi soup to enjoy this beautiful Wednesday lol......is sweet espeacially when you cook with bitter leaf.I prepared this delicious with cow meat (tongue part), grinded egusi one and half cups, grinded crayfish,dried fish,pepper,palm oil, salt,bitter leaf,periwinkle and water.
Cooking details: cook meat and dried fish with onions, pepper, salt ,crafish and water (150cl),then remove the cooked meat and cool fry it for 5mins with palm oil and small onious ,then add egusi stir it together for another 5mins then add the steam meat and fish water stir then allow it to boil for like 10mins then add bittrr leaf and periwinkle.
Then for POUNDED yam : washed the pilled yam cook with water and cook till the yam is soft then pound . Hmm......very nutritious periwinkle (isam) gives calcium,iodine and protein,egusi gives protein,fats and oil,crayfish and meat gives protein,palm oil gives vitamine A,salt gives iodine and calcium, water aids digestion,yam gives carbohydrate and vitamin B1.
