Go for dessert! On this occasion I have prepared a casserole of pasta filled with pastry cream and apple blossom that favors the sweet one. I have based this recipe to get my own version. Let's see what you think.
Material (for one unit)
1 sheet of fresh pastry breeze or puff pastry
1 apple
half juice
lemon water
a little butter to spread the mushrooms
For cream
¼ liter of whole milk
80 g sugar
3 egg yolks
3 tablespoons (about 25 g) from Maizena
Preparation
Preparation cream
To start with let's make a pastry cream. If you want to use your purchase you can skip this step. But it's easy to do and twice as good, I suggest you give it a try.
Put the milk and sugar into the pan and heat a very soft fire.
Meanwhile, insert it into a bowl of egg yolks with cornstarch. Mix well, make sure there are no bumps, until there is a paste like this:
When you see that the milk will boil (but without reaching its boiling point), remove the spoon containing hot milk and pour it into a bowl, in the previous mixture, and release it well.
Next, pour all the contents of the bowl into the fire milk pot. Start stirring immediately with the hand mixer. It must be removed energetically because it will thicken quickly, and should be done continuously as the cream warms up.
It does not have to boil anytime, but you have to let it cook for a while. When you see that it will boil, remove the pot from the heat and continue the stirrer cream for a few minutes, until you get a very fine cream.
Next, pour the cream into another container, preferably glass. Cover with plastic wrap so that it touches the cream, to prevent it from hardening and a hardened layer appears. Backup cream for later. (Do not put it in the refrigerator until it's really cold.)
NOTE: This pastry cake has many applications: it can be used as a filler or as an accompaniment for many desserts, or even to be consumed with some cookies. If you want to keep it, keep it in the refrigerator for a maximum of two days.
Prepare the dessert
Cut the shortening circle of the paste according to your printout, taking into account that it should cover the bottom and side of the mold. I want to cut the circumference using a small reverse pan, to draw a circular line that I have to cut. Then fold the mold (if you want, previously oiled with a bit of butter) with pasta, and translucent slightly with a fork.
Put the mold into the oven in accordance with the indication of the breeze: in my case, 10-15 minutes at 180 ° C. After cooking time, remove from the oven and leave at room temperature without removing the dough from the mold. In the meantime we will decipher the interest that will go inside.
Divide the apple into two. Without peeling at any time, remove the bone and cut it thin as necessary, without splitting it.
Insert the slices in a microwave-safe container and add water to cover the apples. Then pour the juice of half lemon, and finally put it into the microwave with full power for 2 minutes.
Be careful, the microwave bowl will burn! Take two tablespoons of water with lemon and store in a separate container. The rest of the water in the bowl can be thrown away, and keep slicing apples in the bowl, alone.
Then come to the piece of pasta you have left behind, spread it on your desk and cut out a small strip that extends. If you want, with a spoon, spread this longcrank shortcrust pastry with water we have saved from the microwave (optional).
Next, place the apple slice above the shortening so that the circular portion is facing outwards. They must be side by side superimposed at the end, ie slightly above the sheet by their side. When you get to the end of the pasta, leave a small place without an apple.
The wind must collect apples well. To do this, fold the bottom of the sheet to the top of the apple. The last two steps will be better understood with the photo:
At this point, you must roll a piece of wind paste on itself to create a flower shape. Begin with the end you have left without apples and roll little by little, try to make sure that the apple slices do not break. In the end, when you have the flower, attach it slightly with your fingers so that it does not slip off.
Then put in a small print and bake as you did before with a circular mold: the cooking time will be the same, if it is the same breeze. In my case, 10-15 minutes at 180 ° C.
While you have flowers in the oven, restore pastry creams. Pour into the pasta casserole you have made. The amount you have to pour depends on your printing capacity, but anyway, calculate that the apple blossoms should stand out above the cream.
Now once you have a casserole with pastry cream in it, only the flowers in it will be lost. When cooked, carefully place the apple blossom inside the pasta casserole, in the center, so that it is held by a pastry cream.
Let the desserts cool down to room temperature and remove from the mold before serving.
