Sweet Potato and Vegetable Soup
Today we are making a very simple yet delicious sweet potato soup! Lots of good veggies in this one. I was surprised at how much the sweet potato really brings this recipe to life, its definitely the not so secret ingredient here :p.
Overall the soup was very yummy and actually made quite a bit of servings. You could easily feed 4 people with this recipe.
One other thing to note is that I'm noticing that these recipes are filling me up more and overall I'm eating less. I'm guessing this is because of all the fiber and REAL food that's in them.
Here's The Recipe
2-3 Small Potatoes
1 Small Sweet Potato
1 Zucchini
1 Carrot
3 Green Onions
5 Cups Vegetable Broth
Salt and Pepper

The first thing you are going to want to do is grab a nice big pot and toss the potatoes in...
Next up, chop up the sweet potato and do the same. I made sure to chop mine into small cubes so that they cook faster but really its up to you how you want to do it. It all tastes the same in the end!
The same goes for the carrots...
Next up grab your broth and toss it in. I noticed that I probably could have added a tiny bit more broth so maybe 6-7 cups might be better depending on how liquidity you like your soup.
Bring it to a boil and let it cook until the potatoes are nice and soft. I think it took me around 10 minutes. Once the potatoes are ready turn the head down to medium.
Now we can chop up our zucchini and add it into our soup. Once again I chose tiny little cubes so it's easier to eat and cook.
The next step is to add in the green onions. Chop em up and toss em in while everything is still cooking.
The very last step is the parsley! I grabbed roughly a handful, chopped it up and tossed it into the soup. Be sure to add salt and pepper to your liking as well!
Congrats Your soup is now finished. It should be ready at this point but feel free to let all the flavors simmer together for a little while longer if you like.

This looks really good! I'm eating better and this would be a nice simple recipe to make and eat from for several days. I love sweet potatoes!!
