Yes, salmon is wonderful @lynncoyle1. I am also very fond of halibut. I have very rarely found that particular fish outside of the Northwest.

Seriously, when first reading your post, I remembered the ONE time my beloved and I were in Hawaii. Our host was a native Hawaiian, with an ancestry going back to Hawaiian royalty. As such, he took us to a "special" place (he really was trying to get us to buy into a timeshare ...), not accessible to tourists (private beach), and demonstrated his fishing prowess, with a circular net, weighted on the edges.
Very fun to watch, but when he caught a fish and proudly proclaimed this was to be our dinner that evening, I can't say I was thrilled. Growing up with catching and eating trout out of high mountain streams and lakes, it definitely did not look very appetizing at all. It was downright "ugly" (not sure how that applies to a fish, but ...)

This old saying definitely applied in our case. We dutifully went back to their home, determined to not give any offense, by in any way suggesting we didn't like the fish.
Happy to report there was nothing to worry about! Like you say here, whatever the spices and however they grilled it, wow ... ... it was a very nice meal of fresh, tasty fish (but, we didn't buy into the timeshare ... 😉).
