These almond cookies are so easy to make and you just will need few ingredients to prepare. Soon this recipe will become one of your favorites. Pair it with Tea or Coffee and enjoy. The flavor almonds give, is so good. Besides, almonds have too many benefits for health. Try this recipe and you will love it.
Note: With this recipe you will get 21 Cookies.
Ingredients:
-150gr. Butter.
-55gr. Icing Sugar (Gluten free).
-315gr. Almond flour or almond powder.
-1 Pinch of salt.
Note:
If you prefer to make with original recipe, just mix :
55gr of Almond Flour, and 260gr of Wheat Flour.
Recommendations:
If you prepare the almond flour:
-Leave to dry the almonds, much better if you leave to dry for one day before you will make the cookies. -To toast the almonds you should take to Microwave oven from 2 to 3 min or in Stove from 6 to 7 min.
-Almonds must be cold before grinding in mixer
-Grind almonds in Mixer from 20 to 30 seconds or until you see that you get the powder consistency but be careful. Because if you leave for more time you can get an almond butter.
-Also you can make the almond flour without removing the skin. Just toast the almond and leave to cool down before grind. Either way is delicious.
For Cookies:
-Take to refrigerator just from 10 to 15 min or bit more, just enough time so you can give shape to the cookies. If you leave more time, the cookies will have a crack. If you notice still dough is soft and you can not give shape of balls, just leave more time on refrigerator until you get the desired consistency to make the cookies. As I told the only thing will pass is the crack but they will be delicious and you will cover with chocolate or icing sugar.
-Leave space of 3 cm between each cookie because they will expand.
-In my case it takes 20 min to bake at 180 C. The time will depend of your oven. Start reviewing the cookies at 15 min. They are don when start to be a bit crack up and light-colored on edges but should be soft on middle.
-Do not move the cookies until they are completely cold. If you move when they are in oven or when you just take out from oven, they will break, because they are really soft. You can sprinkle with Icing sugar or melted chocolate.

Estas galletas de almendra son tan sencillas de hacer y solo necesitaras muy pocos ingredientes, que muy pronto se convertirán en uno de tus postres favoritos, acompáñalas con un te o café y listo. El sabor que le da las almendras es especial ademas que las almendras tiene muchos beneficios para la salud. Intenta esta receta y ya veras que no te arrepentirás.
Nota:
Con esta receta obtendrás 21 galletas.
Ingredientes:
150gr. de Mantequilla.
55gr. de Azúcar Glass (Libre de gluten).
315gr. de Harina o Polvo de Almendra.
1 pizca de Sal.
Nota:
Si prefieres hacer las galletas con la receta original, solo debes mezclar: 55gr de Harina o polvo de almendra. 260gr de Harina de trigo.
Recomendaciones.
Si preparas la harina de almendra:
-Deja secar las almendras, mucho mejor si las dejas por un día secando.
-Para tostar las almendras debes llevarla al microondas de 2 a 3 min. o en la estufa de 6 a 7 min.
-Las almendras deben estar frías antes de moler en la licuadora.
-Solo ponlas en la licuadora o procesador de alimentos de 20 a 30 segundos o hasta que veas que se ha formado el polvo pero ten cuidado porque si no las quitas a tiempo vas a obtener una mantequilla de almendras.
-También puedes hacer la harina de almendra sin quitar la cascara, solo tostando la almendra y dejando enfriar antes de moler. De cualquiera de las dos formas es deliciosa.
Para las galletas:
-Llévalas al refrigerador de 10 a 15 min. o un poco mas solo lo suficiente para darle forma a las galletas si la dejas mas tiempo entonces al hornear las galletas, quedaran con muchas grietas. Aunque eso no significa que no quedaran deliciosas. Si ves que al hacerlas la masa esta muy muy suave y no puedes darle forma déjalas mas tiempo en el refrigerador. Solo vigila hasta que ya veas la masa firme. Como les comente si te pasas un poco lo unico que sucedera es que se formaran grietas pero es solo cuestion de imagen. De cualquier forma las cubriras con chocolate o azucar glass.
-Deja una separacion de unos 3 cm entre cada galleta.
-En mi caso me llevo 20 min. Hornearlas a 180 C pero dependerá de tu horno. Comienza a revisar desde los 15 min. Notaras que de las orillas ya estarán doraditas aunque en el centro aun blanditas.
-No muevas las galletas hasta que estén completamente frías, si las mueves cuando están en el horno o cuando recién las sacas del horno, se desbarataran. Ya que estén frías puedes manipularlas, quedan suavecitas como polvoron. Puedes espolvorear con azucar glass o chocolate derretido.
