I woke up this morning craving sushi. So I thought why not make a sushi bowl! Super simple and tastes so yummy! This deconstructed sushi bowl leaves a lot of options for you to play around with. It is completely vegan and there is no lack in taste.
Quick tip on the tofu. Make sure you buy extra firm tofu. All you need to do then is cook until brown on a non-stick skillet. The consistency is just like meat and it is full of protein. Try this out!!
Ingredients:
1/2 avocado
1/2 cup brown rice
Chopped carrots
Diced cucumber
Diced tofu (bought organic extra firm)
Two squares of seaweed
1 tsp sesame seeds (toasted)
Green onion for garnish
Dollop of wasabi if you like the spice!
Sauce (only need a tbsp):
Light mayo
Light soy sauce
Sriracha
