To this day every region of Greece - and every bakery in that region - has its own unique version of some kind of cheese pie or tart. Sweet or savoury, wrapped in phyllo or other kind of pastry, with or without eggs - The variations are endless. The week before Easter the housewives of Symi bake thousands of the little half-moon shaped ones that they call tourtes, to share with friends and neighbours on Easter Sunday. Yum. :-)
