The owner of the bakery I work in really loves to grab new ingredients on the fly. She is always scooting around town finding interesting items and seasonal goodies. This week she picked up Passionfruit Jam and fresh Mangoes. From this, I made a lemon based cake with pureed mango, filled between each layer with the Passionfruit Jam, iced it all in a lemon buttercream frosting, then made a glaze from the jam to top it all off. A pleasant mix of tart and sweet.
