Sodamngood: Beef tartare. Levain crisp, mustard-fennel kraut, horseradish, egg yolk, ramps, spruce. Beef is a combo of dry aged 28 day new York strip and the eye of round. The beef is tossed with pickled ramps, shallots, chives, lemon, and olive oil. The mustard fennel kraut is a mix of fennel and cabbage fermented in house for 2 weeks. The horseradish is grated fresh.
Looks great but I would prefer a different perspective that actually allows me to admire the amazing beef :)
