Lunch Time!

Wanted to share a quick lunch idea today. Instead of overpaying for something semi "healthy" at a restaurant, why not chop up and throw some delicious foods together for a spectacular tasting lunch that will surely tickle the taste buds?!!! I sent this yummy lunch with my man today. The salad consisted of lettuce, beats, and strawberries from our local farm; raw pumpkin & watermelon seeds; and raw feta cheese. I make my own salad dressing with local black cherry infused balsamic and extra virgin olive oils straight from Italy folks.. it's AMAZING!!!!!! The other bowl is a snack for when he needs a mid-afternoon pick-me-up. I chopped up some locally grown carrots, raw jack cheese, roasted almonds and figs.

This brand of cheese is a winner! Not only is it raw but this brand does NOT have animal rennet used. What is "rennet" you ask? Well, for those of us who do not eat pork, rennet of any kind whether it is "microbial, animal, enzymes etc." is PORK! Sneaky aren't they? Vegetable rennet is the only kind without pork. Just a little fun fact for you today!

Great looking creation, and I'm a huge fan of pumpkin seeds. They are such a great snack that I often carry on the bicycle when riding.

Pumpkin seeds are one of those overlooked snacks. They have such a punch of nutritional benefits!

It really is amazing that you have to look for unclean food in items that you would have never thought about. Have you looked into wine yet? A lot of the filtering that is done is done by unclean animals making most wine undrinkable!

We aren't wine drinkers... don't like all the sugar content. But you are quite right. Wine is also HIGHLY toxic with other chemicals that they spray over the grapes as they grow for pest control. A lot of them have arsenic. Yikes... so we just stay away. I know there is a safe list out there.
