Chonggak kimchi
is another kind of korean kimchi. It’s made with chonggak mu (ponytail radish).
The word 'chonggak' means “bachelor” in Korean. It is originated from the ponytail hairstyle which young boys/men used to have in the old days.
You can also call it as young radish kimchi or pickled young radishes.

I myself prefer this chonggak kimchi to cabbage kimchi because I like the texture and taste of radish.
It's so great to have it together with korean noodle soup, (koran ramen).
Differently from cabbage kimchi, you cannot easily find this kind of kimchi at most restauratns. It's probably more difficult to prepare and make, and, in addition, it costs more.
