Today I will share the method of making egg scallion oil cake for everyone
Egg scallion oil cake are a special kind of pasta in northern China, Its raw materials are made from egg, scallion, salt, flour and other main ingredients. The taste is salty and crisp, which is very popular among people.
Ingredients:
1: flour (560 g); 2: shallot (65 g); 3: egg (six);
4: black pepper powder (3 g); 5: salt (5 g); 6: vegetable oil (200 g).
Step:
1: Pour flour (500 g), warm water (260 ml) and vegetable oil (30 g) into the bowl, stir well, and knead the dough;
2: Divide the dough into 10 pieces / 50 grams, then knead the shape of the strip, then apply a layer of vegetable oil on the surface and put it in the dish for 40 minutes (please refer to the video);
3: Chop the shallot;
4: Put the shallot, flour (60 g) and black pepper powder in the bowl and mix well;
5: Heat the vegetable oil (80 g) to 70%, then pour into a bowl, then add salt to mix well;
6: Take out the fermented dough, use a tool to press into a rectangle, then evenly put the scallion oil, and then roll into the shape of a round cake (please refer to the video);
7: Heat the electric baking pan, then fry the shallot cake for 1 minute;
8: Finally, evenly brush the egg liquid on the upper and lower sides of the scallion cake, and then fry for 1 minute to complete.

Precautions:
1: Please use medium-gluten flour;
2: the temperature of the water is between 25-30;
3: When the dough is proofed, it needs to be covered with plastic wrap, which will accelerate the fermentation process of the dough (please refer to step 2);
