Freshly-salted cucumbers

Salted cucumbers are a traditional Ukrainian cuisine made from cucumbers by the method of their pickles and pickles in brine from water, kitchen salt, garlic, dill, horseradish leaves, currants, cherries, oak, chestnut.

Со́лені огірки́ — традиційна страва української кухні, виготовлена з огірків методом їх соління й квашення в розсолі із води, кухонної солі, часнику, кропу, листя хрону, смородини, вишні, дуба, каштана.

     

For this we will need:

  • 1 kg of cucumbers - preferably one size
  • 1 liter -waters
  • 1 head of garlic
  • 1 bunch of dill
  • Leaves of currants and cherries
  • Horseradish leaves

Method:

1.Put the garlic, horseradish and horseradish leaves in the bottom of a large sterilised jar and add the cucumbers.

2.Add the salt to hot water and mix thoroughly. Pour the salted water over the cucumbers, screw on the lid and leave to rest for 24 hours.

 3. The cucumbers will keep in the fridge for one month. 

So, the spit in the cucumbers became turbid, and for some even a white plaque appeared. White plaque is lactic acid - a natural preservative and cucumbers will be stored for a long time. Raid does not need to wash!
