This is my “go-to” lunch everyday! A mix of soft cheese, cured meat, dried fruit, fresh greens and some fresh vegetable soup. Today my soup is a beet, cabbage and cumin concoction.
Soon I’ll be growing fresh basil that will go nicely with this spread.
Now if only I could add a sparkling glass of prosecco to the mix! I guess I’ll have to settle for LaCroix since I’m at work.
