This morning I didn't want to open my eyes until I felt the smell of the hazelnut biscuits I had prepared last night.
I ran to the kitchen, where I made a nice cup of tea and ate a good cookie!
Recipe
Ingredients:
• 200 grams of semi-whole spelled flour
• 100 grams of chopped hazelnuts
• 100 grams of water (or vegetable drink without added sugar)
• 4 Medjoul dates
• 80 grams of sunflower oil, high oleic
• a pinch of whole sea salt
• untreated lemon or orange peel
• half sachet of raising agent with cream of tartar
First of all, soak the 4 pitted dates in half a glass of water for half an hour.
If the hazelnuts are not chopped, you must chop them.
Drain the dates and chop them with half the water.
Now you can take a bowl and pour in the flour, the chopped hazelnuts, the baking powder and a pinch of salt, then add the liquid part and then the dates, the remaining water and the oil.
Grate a nice untreated lemon and add the peel to the dough
Start to knead. If it should be too soft, you can add one or two tablespoons of flour.
Let the dough rest for half an hour.
You can choose to spread the dough between two sheets of baking paper or to make balls and lightly crush them with your hands.
In the first case you will have more crumbly cookies while in the second you'll get soft cookies!
Bake for 15 minutes at 180 degrees in the preheated oven.
