On today's recipe we made a delicious recipe for Shrimp ceviche. It is a delicious recipe for these hot summer days. Please enjoy this great recipe. As it has been used by my mother since I was a little kid !
Shrimp Ceviche
2 lbs of small Shrimp peeled and Deveined
3 limes
3 Lemons
2 tomatoes
1 onion
1 cucumber
2 medium avocado
2 tsp salt
1 tsp pepper
2 or 3 tbs ketchup
Poaching water
3 1/2 quarts of water
2 tbs salt
3 cups of ice cubes in water
1 bag of tostadas
1 tsp hot sauce Tapatio
First Chop cucumbers, tomatoes, onions, avocados and cilantro into small cubes , set aside in the refrigerator.
Next bring 3 1/2 quarts of water to a boil and add 2 tablespoons of salt. once water has begun to boil reduce heat and add 2 pounds of shrimp and poach for one to two minutes. Drain immediately and place shrimp in iced water.
Once the shrimp are completely cool drain excess water. Now place the shrimp in a separate bowl and squeeze all the limes and lemons all over the shrimp. Add 2 teaspoons of salt and mix. Now place mixed shrimp in the refrigerator for 30 minutes. After the 30 minutes, add all the vegetables that were chopped. Add 2 to 3 tablespoons of ketchup. Add to 2 teaspoons of salt. Add 1 teaspoon of pepper. mix thoroughly and place in the refrigerator for another 30 minutes before serving. Once complete now serve over tostada chips and add your favorite hot sauce and enjoy.
