FOOD | Sweets | Nutty Bar

This is my first recipe on Hive. I wanted to start off with something sweet, and as it rains here in Norway - although awesome for the flowering beauties - it might be gloomy for some of us, so something sweet might just lighten the heavy rain.

I've seen plenty posts about food. Sometimes I take the time to read through the entire post, look at all the pictures, noticing how my eyes widen, my stomach begins to ache, how I barely blink. And yes - the drooling.

This post will be short tho, as I only have one photo, but more photos will be up in future posts. Which is, as I've figured out, good PR for the recipe :) Especially if the recipe is meatless, sugar free, etc.

Servings: 1. Or 24
Time: about 20 min

Ingredients

100 g chocolate (70% cocoa)
1 tbsp coconut oil

2 handfuls of walnuts
2 handfuls of almonds
2 handfuls of peanuts
2 handfuls of pumpkin seeds
1 handful of buckwheat
2 tbsp chia seeds
2 dl granola
3 tsp cinnamon
1 tsp ground nutmeg

about 20 dates (pitted)
4 tbsp peanut butter
2 dl water

pinch of sea salt


Instructions

  • In a mini pan, melt the coconut oil on medium heat, and before its completely melted, add the chocolate and stir. Don't shake. Turn off the heat when the chocolate is halfway done (#sparetheelectricity)
  • In a food processor, chop up the walnuts, almonds, peanuts, pumpkin seeds and bokwheat - until the almonds are roughly chopped
  • In a bowl, mix the granola with the spices, and add the chia seeds and the content from the food processor
  • Chop up the dates with the peanut butter and water in the food processor until it becomes creamy
  • Add the nut- and granola mix to the peanut batter, and run the food processer for a few minutes. Use a spatula to scrape down from the sides during the chopping and blending
  • In a 20x30 cm baking tray (the size of an A4/regular sheet of paper), pour the nut batter onto a baking paper and press it down slightly with a spatula. Pour the melted chocolate on top of the nut batter and sprinkle with sea salt
  • Let the nutty bars cool down for a couple of hours in the fridge before cutting the bars

Tips, Tricks etc

  • If you want to swap these nuts for others - do it. Post it in the comments if you want. I'd really like to know if making the Nutty Bar brought you joy! And tips on how to improve the dish. Also criticism, as it is a tool for growth :)
  • If you want the nuts to be coarsely chopped - do it. If you don't, then don't. The preferred size of the nuts is relative
  • The bars can be kept in the freezer for a few months. Maybe more. Haven't tried as I finished the first batch pretty quick

Nuts and seeds are healthy. They provide you with the healthy fats - the mono- or unsaturated kinds - which have actually been proven to lower cholesterol. Also, nuts and seeds may reduce depression.

Dates are also healthy. They contain a lot of good nutrients, fiber, antioxidants. etc. - of which the latter acts as a martyr in the human body, among other things. I sometimes start my day off with a few dates covered in peanut butter (ambiguous? no?)

Dark chocolate contains a high amount of antioxidants too, as well as serotonin, which regulates stress.

Hi @naturalmedicine and @trucklife-family. Thank you for commenting :) I totally agree. Even though it might be easier and quicker to buy snacks, which are most likely unhealthy, healthy snacks are good for us in the long run :)
