Alu Paratha - India never fails to get it right. Another fabulous snack.
Traditionally served at breakfast time - I love it also for a little sharing snack in the afternoon.
It's a very easy dish - a spicy mash potato mix with spices stuffed inside the whole wheat flour (atta) Paratha.
Alu Paratha - Served with Curd and tangy tart lime pickle. The right amount of taste & spice.
Ingredients - The Filling for approx 8 paratha
4 boiled potatoes - a pinch of salt - 2 green chillis - 1 teaspoon Garam Masala - dash of turmeric - 1/2 teaspoon chill powder - fresh coriander.
Method - Boil potatoes and mash - once mashed you simply add all other ingredients and further mash together - Done.
Ingredients - The Paratha
2 cups atta - salt - 2 teaspoons oil or ghee
Method - mix flour salt and oil together to make dough, adding water as required to knead. Let dough rest for approx 30 minutes.
And finally - The coming together of this easy delicious snack.
Method - The basic thinking here is to make an Alu Paratha sandwich - Aim to roll out two circles approx 5 inch diameter - dusting with a little atta - Then simply fill the pototo mixture on one circle leaving the edges clear approx 1.5inch - then pop on top the other circle and press down - taking a rolling pin roll out to approx 8 inch diameter - Done & Ready to fry with some ghee on a hot griddle or suitable pan.

1 - You could make the spicy Alu Mix and for a speed snack you could choose to have on toast or inside a pitta bread with some salad for a yummy packed lunch.
2 - Instead of mashing the potatoes keep potato in cubes and serve as an accompaniment with curries and rice.
