SCRAMBLED EGG TACOS BREAKFAST
Ingredients
- 3 eggs
- 2 small corn tortillas
- 50g pico de gallo
- 2 tablespoons of chopped cilantro
- 2 tablespoons drained and rinsed black bean in can
- kosher salt
- black pepper
- 1 teaspoon olive oil
The steps
- Place the eggs into a small bowl and whisk all together.
- In a medium nonstick pan, heat olive oil over medium heat. Add beaten eggs and season it with salt and pepper.
- Stir the eggs often until firm using a rubber spatula.
- Divide eggs between the tortillas, then top each taco with black beans, cilantro and pico de gallo.
- Serve and Enjoy!
