BACON CHEDDAR JALAPENO STUFFED HUSH PUPPIES


Ingredients

  • 300g cream cheese
  • 1 grated yellow onion
  • oil
  • 2 1/2 teaspoons sugar
  • 3/4 teaspoon cayenne pepper
  • 250mL buttermilk
  • 1 1/4 teaspoon baking soda
  • 1 1/4 teaspoon baking powder
  • 3 teaspoons kosher salt
  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all purpose flour
  • 1 cup shredded cheddar cheese
  • 3 jalapenos, seed removed and minced
  • 1 cup of cooked and crumbled bacon
  • 2 teaspoons ground black pepper
  • 2 small eggs, beaten

The steps

  1. Add cheddar, cream cheese, bacon and jalapenos in a medium bowl. Blend well using a hand mixer.
  2. Scoop the cream cheese mixture and roll it to make a ball.
  3. Put it on a tray with parchment paper.
  4. Freeze the cream cheese balls for 30 minutes.
  5. Add the salt, baking soda, sugar, baking powder, flour, cornmeal, pepper and cayenne pepper. Whisk well then set aside.
  6. In a measuring cup or bowl, add buttermilk, eggs and yellow onion.
  7. Pour buttermilk mixture in the bowl with dry ingredients. Whisk until combined.
  8. Leave for 30 mins.
  9. Preheat a pot with oil to 180C.
  10. Dip the cream cheese ball to the buttermilk batter. Make sure that each ball is fully coated.
  11. Add the balls into the pot of oil. Fry it until it becomes golden brown.
  12. Drain the excess oil in a paper towel.
  13. Serve with rice and Enjoy!
