BACON CHEDDAR JALAPENO STUFFED HUSH PUPPIES
Ingredients

300g cream cheese
- 1 grated yellow onion
- oil
- 2 1/2 teaspoons sugar
- 3/4 teaspoon cayenne pepper
- 250mL buttermilk
- 1 1/4 teaspoon baking soda
- 1 1/4 teaspoon baking powder
- 3 teaspoons kosher salt
- 1 1/2 cups yellow cornmeal
- 1/2 cup all purpose flour
- 1 cup shredded cheddar cheese
- 3 jalapenos, seed removed and minced
- 1 cup of cooked and crumbled bacon
- 2 teaspoons ground black pepper
- 2 small eggs, beaten
The steps
- Add cheddar, cream cheese, bacon and jalapenos in a medium bowl. Blend well using a hand mixer.
- Scoop the cream cheese mixture and roll it to make a ball.
- Put it on a tray with parchment paper.
- Freeze the cream cheese balls for 30 minutes.
- Add the salt, baking soda, sugar, baking powder, flour, cornmeal, pepper and cayenne pepper. Whisk well then set aside.
- In a measuring cup or bowl, add buttermilk, eggs and yellow onion.
- Pour buttermilk mixture in the bowl with dry ingredients. Whisk until combined.
- Leave for 30 mins.
- Preheat a pot with oil to 180C.
- Dip the cream cheese ball to the buttermilk batter. Make sure that each ball is fully coated.
- Add the balls into the pot of oil. Fry it until it becomes golden brown.
- Drain the excess oil in a paper towel.
- Serve with rice and Enjoy!
