CREAMY MUSHROOM AND CHICKEN PASTA
Ingredients
- 750g chicken breasts, boneless, skinless and cubed
- 500g farfalle pasta
- 3 tablespoons olive oil
- 1 diced yellow onion
- salt
- pepper
- 4 cups chicken broth
- 5 minced garlic cloves
- 2 cups cremini mushrooms
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- 1 cup heavy cream
- 1 1/3 cup parmesan cheese
- 2 cups of spinach
The steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat, then add the chicken.
- Season the chicken with salt and pepper. Cook until brown. Set aside.
- Add one tablespoon of olive oil in same pot and add the onion. Cook it for 1 to 2 minutes.
- Add mushroom and garlic. Stir well.
- Season with salt and pepper, then add thyme and paprika. Stir again.
- Add chicken broth and heavy cream. Stir again. Bring it to boil.
- Once it boils, add the farfalle pasta. Cook it according to package instruction until it becomes al dente.
- Add spinach and chicken. Stir until spinach is cooked.
- Add parmesan and stir well until sauce becomes smooth.
