CREAMY MUSHROOM AND CHICKEN PASTA


Ingredients

  • 750g chicken breasts, boneless, skinless and cubed
  • 500g farfalle pasta
  • 3 tablespoons olive oil
  • 1 diced yellow onion
  • salt
  • pepper
  • 4 cups chicken broth
  • 5 minced garlic cloves
  • 2 cups cremini mushrooms
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • 1 1/3 cup parmesan cheese
  • 2 cups of spinach

The steps

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat, then add the chicken.
  2. Season the chicken with salt and pepper. Cook until brown. Set aside.
  3. Add one tablespoon of olive oil in same pot and add the onion. Cook it for 1 to 2 minutes.
  4. Add mushroom and garlic. Stir well.
  5. Season with salt and pepper, then add thyme and paprika. Stir again.
  6. Add chicken broth and heavy cream. Stir again. Bring it to boil.
  7. Once it boils, add the farfalle pasta. Cook it according to package instruction until it becomes al dente.
  8. Add spinach and chicken. Stir until spinach is cooked.
  9. Add parmesan and stir well until sauce becomes smooth.
  10. Serve and Enjoy!
