As much as we love dining out, my favorite part of the week is cooking at home. The other day, I made a white chicken chili, which is super easy and quick (under an hour) and boy is it flavourful. Also, it is very appropriate on a chili day in Toronto.
In the past, I made a lot of tomato sauce based chili. But lately, I am really taken with this white chili. It's super fun to try new dishes and this is one of them.
Here are the ingredients:
– chopped onion, crushed garlic, canned diced green chile peppers, fresh green chili pepper with seeds removed, ground cumin, dried oregano, cayenne pepper, chicken broth, cooked chicken, white beans, frozen corn and cilantro.
Here are the steps:
- wrap chicken in foil and bake for 20 minutes at 400 degrees
- fry onion, mix in garlic, peppers, cumin, cayenne, and oregano
- add beans and then chicken broth, simmer
- stir in the chicken and simmer
- add corn and cilantro at the end before turning off the heat
You see, how easy it is to have a pot of comfort food. Your family will love you for that!
