Hello helllloooooo this Pad Thai recipe is easy and quick to make whilst being deliciously tangy and way healthier than the one you would buy from your local restaurant! This is my first recipe ever uploaded so please stay tuned for more healthy and easy recipes to come!
INGREDIENTS:
- 1⁄2 large red capsicum - 1 1⁄2 carrots
- 1 zucchini
- 2 chicken breasts
- 1 onion
- 2 eggs
- 1 garlic clove
- dried rice noodles
- 2 lemons or limes (or one of each) - peanuts
- sweet soy sauce
- tamarind paste
- fish sauce
METHOD:
Cut the chicken into strips, and fry with 3 tbsp. of sweet soy sauce. To make sure its not overcooked, don’t fully cook the chicken just fry for a short amount of time (until you can’t see any pink without cutting the chicken). Put chicken in a bowl and set aside (it will keep cooking because its still hot in the bowl)
Cut all the veggies into strips (like in photo or however you want). First fry onion and garlic for a bit, and then add the capsicum and carrot. Then after frying for a bit longer add zucchini. Leave in pan.
Cook the rice noodles in another saucepan and then add the cooked noodles to the vegetable pan.
Fry them all together and add 2 whisked eggs until they break up and cook amongst the noodles. Then add the chicken, a handful of crushed peanuts, a handful of chopped coriander, juice of 1 lemon or lime, 3 tbsp. tamarind paste, 3 tbsp. fish sauce, and 7 tbsp. sweet soy sauce.
Put in bowl and garnish with more peanuts, coriander and a lemon or lime wedge.
