Cooking with Taica #3, SALMON SPAGHETTI (easy)

Tools Cookware:

Iron cast or stainless steel big pan, big pot for pasta, sharp knife, chopping board, drainer, wooden spoon, big fork for mixing pasta in boiled water.


Ingredients 4 persons :

  • 200g Smoked salmon
  • 400g Spaghetti (I like Barilla n3, you can use other kind of long pasta)
  • 400 ml Cream for cooking (you can use fresh milk cream)
  • Half glass of white wine
  • Fish or Chicken stock (can be a cube stock if you don't have real one)
  • 3 medium cloves of garlic 
  • small red onion or shallot
  • Piece of butter (one big spoon)
  • Fresh parsley 
  • Fresh basil leaves
  • Spoon of olive extra virgin oil
  • Salt and pepper

             This is how I make my Smoked Salmon Spaghetti:

Chop very tiny the garlic the onion and the parsley and cut the salmon to a small pieces, put everything aside. Make hot the pan (medium fire not too hot), put in a spoon of olive oil and the piece of butter immediately followed by onion and chopped garlic. Also add some stock, one spoon or so to prevent from burning, you don't want to get the onion or garlic brown, light gold color is what you want, when it dries and starts getting a color add some pieces of smoked salmon (note, at this point you will add just a little piece of smoked salmon like 10 % of your available salmon) and tear some basil leaves, pour some wine and cook little bit. When it dries again add the cooking cream, some stock, salt and pepper second your taste and cook it on a slow fire just enough to boil, 5 to 10 minutes. Keep adding the stock if needed. The texture of the sauce must be creamy but not dry. Onion and garlic in the sauce must nearly melt.


In big pot boil salty water (4L of water for 400 g of spaghetti) Really 4L of water is what you need for the mentioned amount of pasta! Cook the pasta 1 minute less than it is written on the box. In the meantime turn off the fire under the sauce. Add to the sauce the 90% of remaining cut salmon and fresh chopped parsley add also some water from pasta, mix everything. Spaghetti when cooked go directly to the pan with the sauce. Don't wash spaghetti with cold water or whatsoever, that’s something done by people who have no clue how to cook pasta! Mix everything for about a minute on a small fire in the pan where you have cooked your sauce. Serve directly from the stove, keep some pasta water if needed to add in case the pasta will get dry. Eat with fresh green salad (Italian dressing, try to add pumpkin oil), If you add Parmesan to spaghetti please don't exaggerate this pasta is all about salmon. Use dry white wine not too strong one. I like Laški Rizling with salmon.

Note: 

  • Always cook pasta “al dente” don’t overcook it. Overcooked pasta has a higher glycemic index.
  • 100g of pasta requires 1 liter of boiling water
  • Never wash the pasta with a cold water after cooking (only if you are about to prepare the cold pasta salad, even in this case is better to cool down the pasta in a special pasta cooler or just by spreading it all over the table and wait till it cools down. 
  • Immediately after putting pasta to a boiled water mix it very well and it will not stick. Never add oil to a boiling water. It will make the pasta slippery and the sauce will not stick to it.

that's a great dish. I like Barilla's spagheti, too, it never becomes sticky.

Yeah!!! That's true, but the most important is to mix the pasta very well just after putting it to boiling water :)
