Moroccan Za'louk salad Ingredients: 2 pieces of eggplant (grilled or chopped and cubed). Two tomatoes (peeled and cut into cubes). Half a cup of chopped parsley. A tablespoon of mashed garlic. Five tablespoons of olive oil. Sweet red pepper and yellow pepper (cubes section). Salt, to taste. Half a teaspoon of ground cumin. Pepper spicy hot pepper (as desired). Ground black pepper.
Preparation Place garlic, olive oil, pepper, parsley and tomatoes in a pan over medium heat, stirring occasionally until thick sauce is formed. Add the roasted eggplant after slicing and add the salt, black pepper and red pepper and stir with the other ingredients and leave it on fire until the water completely dry and condensation components. Place the za'louk in the serving dish and sprinkle with chopped parsley.
