How to make salted bamboo shoots with chili

Salted bamboo shoots with chili is a delicious, nutritious dish that many people love. It is the main dish or side dish when people eat rice or noodles.

Step 1:

Bamboo shoots must be peeled of their brownish husk before eating. Place the shoot in a saucepan and cover with water and bring to a boil for 30 minutes.

Note: do not cover the lid on pot because poison in bamboo shoots can evaporate. . After that, steep them in rice water in 2 days (change rice water twice a day) .Then rinse and let the bamboo shoots dry.

Blend the chili with garlic, carrot and a little water in a blender. Put bamboo shoots in a glass jar. Add 2 liters of water (cooled boiled water), add 3 teaspoons of salt, 2 teaspoons of sugar and garlic, mix well then pour the mixture into a glass jar. Make sure the broth is flooded with bamboo shoots If you want more sour bamboo shoots, use vinegar.

Note: "if you use vinegar, you will not need to add water.

Step 3:

Add garlic and chili smashed on the top. Cover the glass jar and let it stand at room temperature for 3 days.
