Cocoa powder is naturally acidic. Dutch processed cocoa powder is treated with potassium carbonate to reach a basic PH. Natural cacao also contains more polyphenols. Though oddly enough the dutch process gives the cocoa powder a more chocolatey taste.
How does one find out if a chocolate is non-Dutch processed? On the label?
