I woke up quite late today with sore muscles. I don't know if it's extreme humidity or if I was actually tired. Nevertheless, I decided to make my favorite Sunday breakfast; Whole Wheat Pancakes with coconut cream and honey.
The recipe is easy but I'll still share it with you guys
Ingredients
- Two cups whole wheat flour
- Three tablespoons raw sugar
- One teaspoon baking powder
- Half teaspoon baking soda
- Half teaspoon salt
- One teaspoon cinnamon powder
- Two cups buttermilk
- Two eggs
- Three tablespoons butter or vegetable oil
Procedure
- Mix whole wheat flour, sugar, cinnamon powder, baking powder, baking soda, and salt in one bowl and buttermilk, eggs, and vegetable oil in a separate bowl
- Pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick)
- Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto the hot skillet and use a spoon to spread the pancake a bit
- Cook until bubbles start appearing on the top. It will take 2 minutes
- Flip and cook until browned and set in the middle, about 2 more minutes
- Repeat process with the remaining batter
When all pancakes are ready, garnish it with coconut cream and honey yayyy
