Hi, @the-veggie-sloth is here. I made veggie chops and I am proud of them because they are quite tasty, nutritious and quite simple to prepare if someone already has the magical art of frying chops so that it would not burn.
In winter I often use frozen vegetables. I make soups, casseroles and creams out of them. Vegetables used for such popular mixes are certainly healthier than available greenhouses in the cold months. They are also quite cheap and quick to prepare.
For chops, I used one of these mixes containing carrots, leek, peas, Brussels sprouts, green beans, and potatoes. I added a glass of lentils to boiling and slightly salted water. You have to cook everything together and when the vegetables are soft, drain and cool a little.
Then I grinded everything into a pulp of medium thickness. Of course, I could use a blender, but I like to see the contents of the chopped chops after slicing. In the middle of the grinding add a glass of boiled rice, one egg, some breadcrumbs and a spoonful of flour. Super healthy our chops will not be... Mix further to obtain a thick mass ready to fry.
Add spices while mixing. Apart from salt, I added a lot of pepper, a teaspoonful of red pepper, some caraway seeds, oregano and basil to add some flavor. Set aside for a moment so that the mixture thickens and form small chops rolled in breadcrumbs. Put it in a hot frying pan and it's done! You can eat them right after frying, but they are also useful in the cold :)
