For anyone passing through Kalladka near mangalore, this small roadside hotel at the junction is a great attraction for its most obvious specialty- its way of serving tea and coffee.
It was my privilege to have The master himself show me how he makes this beautifully set beverage.
He quickly arranged for a glass , poured a quarter of milk which was already mixed with sugar. He then poured the already made decoction into a spoon and slowly let it flow on top of the milk. It swirlled beautifully on top of the milk but didnt mix as it is a little denser than normal.
This regular transparent glass now shows decoction – be it tea or coffee – swirled on top of the milk. The glass, in typical local fashion sits inside a small stainless steel bowl with a spoon placed beside it to stir the beverage. Once stur the tea looks as normal as it could be, but once you drink it the texture the taste is nothing close to our “very usual”, and it tastes only so because of the finesse of those practised hands that made it ❤️
