Toasted Avocado and Enoki Mushroom Sandwich | My Favourite Vegan Lunch

What could be better than a toasted sandwich? With avocado none the less!


Hello again Steemians, today I am sharing a little magic that I discovered a few months ago. I will keep it brief and save you the suspense. Enoki mushrooms on toasted sandwiches are beyond what you can imagine, I implore you to try this recipe. Yeah, it is simple and will only take you 15 minutes but it is a great lunch option - not exactly the healthiest option out there but it sure is satisfying if you want something different to a standard sandwich

Ingredients

  • 1 bunch of enoki mushrooms
  • 1 avocado
  • alfalfa sprouts
  • bread of choice
  • 1 tbs olive oil
  • 1/2 tbsp soy sauce
  • 1 tsp sriracha
  • 1 tsp maple syrup
  • dijon mustard
  • cooking spray
  • salt and pepper

Steps

  1. Mix together the soy sauce, sriracha and maple syrup and set aside.
  2. Cut off the woody end off the enoki that binds it all together, then separate mushrooms so they are loose
  3. Heat oil in a saucepan over medium heat and cook mushrooms for around 2 minutes until they start to become tender.
  4. Mix in the sauce mixture and saute for another minute or 2 until the sauce cooks down a little bit. Remove from heat and set aside.
  5. Construct the sandwich starting with a spread of dijon mustard (or any condiment to your liking), followed by avocado, fresh alfalfa sprouts and finally the cooked mushrooms. Spread them all evenly and top with your second piece of bread.
  6. Spray a small amount of oil onto a clean pan or sandwich press and cook them suckers until both sides are crispy and golden brown.
