Yay It's Monday π
Did you have a great weekend? I did. I baked a cake, 2 dozens cookies, also baked cheesey tortillas for lunch. Boys as always locked in their rooms, busy with their computers. Husband napped, like a lot. So everyone left me alone, for me to enjoy my kitchen time π
As for Monday? Just starting. So far so good. A little chilly outside but temperature will warm up later in the day, supposedly. Today, more time to myself....as in its cleaning time for 4 washrooms in this house π
When mommy's back on her foot, house chores are back as well as parenting duties. Dammit π€£π€£π€£π€£ I need a self driving super smart car like KITT from Knight Rider, and Bicentennial Man - NDR 114 Robot! π
For today, let me share the baked cheesey tortillas, while for the cake and cookies, some other time π
500 g lean ground beef
1 heaping full cup frozen mix (or more it's up to you)
2 tbsp flour diluted in enough water
1 handful crushed parsley
2 tbsp chives
Chicken bouillon powder to taste
A pinch of mushroom granules
1 tsp sweet paprika powder
1/2 block of pizza mozzarella, grate
Corn flour tortillas
Flour glue (a little flour mixed with a little water until paste consistency)
2 beaten yolks
Brown beef, then stir in frozen veggies, cook on medium heat, for 2 mins
Season with everything that is listed, then stir in diluted flour, to thicken
Take off from heat, let cool to room temperature
Grate cheese and set to side
Preheat oven to 400 F and grease a rectangular pan, set aside
Grab a tortilla, brush sides with diluted flour, and spoon beef on one side of the tortilla, sprinkle with a little cheese, fold. Brush with diluted flour again, and fold into triangle like shape
Place filled tortilla on pan, repeat steps
Brush tortillas with beaten yolks. Cover tortillas with tons of grated cheese
Bake for 15-20 mins
Serve and enjoy π
