I have a lot of things to do today. There's a room in my basement that I have to start clearing out the boxes as my oldest wants to move downstairs, my youngest will move to his current room, while my husband is going to move his home office to my youngest's 😁
Just the thought of it tires me, though!
So let's just share this super simple cake recipe 😍
Cake
3 c strong baker's flour
2 tbsp cocoa powder
2 1/4 tsp double acting BP
1 1/4 c sugar
4 eggs
1 tsp vanilla essence
3 /4 c peanut oil
1 c milk
Pudding Layer
90 g (1 large box)
Milk
Chocolate Glaze
3/4 c dark chocolate chips
3/4 c semi sweet chocolate chips
250 ml heavy whipping cream
In a bowl, mix dry ingredients, set aside
Cream eggs, essence and sugar until pale and fluffy
Add in some of the flour mixture, followed with oil and milk, then add in flour mixture again, followed with oil and milk, then lastly flour mixture again
Bake on preheated 350 F for 45-55 mins
Take out from the oven, flip the cake pan, peel off the parchment
Poke holes (with a spatula's end is perfect) and let cool to room temperature
Once cake is cooled, let's make the pudding layer, by following the instructions on the box. The measurement of the milk will be on the box as well
Let stand for 2-3 mins, spread pudding on top of cake, chill overnight if not at least 2-3 H
Now let's make the chocolate layer
Heat heavy whipping cream til lukewarm, don't let it boil, take off from heat, then quickly stir in chocolate chips until melted and well combined. Let stand for 3-5 mins, until no steam, then pour slowly on top of pudding layer
Chill overnight if not 3-5 H, before serving
Slice and enjoy!
