Christmas baking has commenced in my house, as we are preparing for my youngest's birthday, yep, he's a Christmas baby π He has born on Christmas eve, so we always super festive in celebrating him ππππ
This year though, I don't plan to make and/or prepare crazy things as I am only 6 weeks post-op, still cannot bend myself, lift anything above 5 kg, make sudden movement without hurting myself. However, he is hoping (and secretly praying π) that it's me who will bake him birthday cake and whatnot.
Today I baked 3 cookies which I will be sharing the recipes today, tomorrow and the day after, should I have the time. Tomorrow I will bake blueberry cheesecake for the whole fam dinner, and on the 23rd, I will try to make him a birthday cake with his favorite chocolate π Let's see, here is crossing fingers my body will be okay and that I don't forget to be kinder to my body π
Anyhoo! These cookies are delicious, I kid you not. My go to recipe when I want something buttery, easy, and yummy π
1 c unsalted butter
1 c icing sugar
1 pouch vanilla sugar
1-2 tbsp cocoa powder
2 c strong baker's flour
1 bag of Hershey's kisses
Unwrap chocolates and place in a bowl, set to side
Preheat oven to 350 F
Mix flour, vanilla sugar, and cocoa powder in a bowl, set to side
Cream butter and icing sugar until well combined, creamy, and pale (about 5 mins)
Mix in flour mixture a little at a time
Scoop a tbsp of dough and drop it on ungreased nonstick baking sheet
Bake for 8-10 mins
Take out cookies from oven and immediately press kisses on each, then chill the whole tray either in the fridge or outside in -23 C π So your kisses won't lose its shape, if you like to! If not, just cool on cooking rack π
