Danube River Layer Cake

Hi Guys!
On Monday we celebrated my oldest's birthday. He requested a cherry cake, so I made him cherry layer cake. In Hungary, there's this cake that is called Dunahullam. It's inspired by that cake, but not quite. The Hungarians use sour cherries (in syrup) for their cake, which isn't easy to find in Canada, plus it's Winter here, no fresh sweet cherries either. Since the birthday boy asked for cherry cake, and all I could find was cherry pie filling, good enough! And no, we aren't into maraschino cherries at all, even though it's everywhere. Should you like to try the recipe and can't find sour cherries in syrup, sweet dark cherries, you can use maraschino though 😊

1/4 c custard powder
50 ml milk

350 ml milk
2 tbsp sugar
2 sticks butter (250 g)

350 g flour
1 envelope vanilla sugar
3 tsp BP
A pinch of salt
1 tbsp cocoa powder

3 eggs
175 g sugar
175 ml peanut oil
175 ml milk

1 can cherry pie filling

2 bars Cadbury dark chocolate @ 100g each
2-3 tbsp Nutella
1 tbsp peanut oil

Mix flour, BP, salt, vanilla sugar in a bowl
Cream sugar and eggs until creamy and pale, then stir in oil.
Add in dry ingredients a little at a time, alternating with milk.

Pour and spread half of the batter onto baking pan

Add cocoa powder to the remaining batter, mix well, the spread onto pan
Spoon cherry pie filling on top chocolate batter

Bake on preheated 350 F until knife inserted comes out clean (with the cherry filling it may be tricky to check, you can poke your knife on sides instead center of cake)

Mix custard powder with milk, set to side

Bring milk and sugar to simmer, then stir in custard mixture, stir til thickened and creamy
Take off from heat, cover with cling wrap in the custard, and let it cool completely to room temperature
Cream butter then mix in custard a little at a time, until creamy

Spread cream on the cake, chill an hour or two, or overnight

Over double boiler, melt Nutella along with oil, and chocolate, pour glaze over cake. Chill a couple of hours or overnight before serving

Take out from the fridge, let stand at least 30mins or so, slice and enjoy ❤️
