Easy Dinner Recipe: Beef Shank Stew

Hope this finds you well ❤️ Thank you for being patient with me, whenever you leave a comment it takes me awhile to reply sometimes. Normally when I post, I'd manage to check out 2-3 posts of others, sometimes only 1 in fact, then start my day preparing breakfast and lunch kits for the boys, head to drive the boys to school and whatnot, before I could have the time to recheck my messages. Sometimes the next day that I am back, should I have another recipe to share, sometimes I don't return at all, when the days too hectic 😅 I will try my best to appreciate the love given and return the same amount to you as much as I can ❤️

For today's recipe, I just love my Instant Pot. As much as I like my slow cooker, not having exhaust in the house is a pain, with the linger food smell, so I prefer the quicker method, which is using Instant Pot 😊

1/2 c flour
1 tbsp chicken bouillon powder
4 Angus beef bones in shanks
2 tbsp peanut oil
1 large onion
2 bay leaves
2 large tomatoes
2 large potatoes
2 celery
2 carrots
A bunch of cilantro
1 tsp blackpepper
2-3 tbsp tomato paste
Broth (chicken, beef, vegetables)

On a plate, mix flour and chicken bouillon powder, set aside

Slice onion and veggies, separately

Heat oil in instant pot, brown beef shanks, then coat them in the flour

Using the grease, saute onion til fragrant, then add in bay leaves and veggies, stir, add in tomato paste, saute for 2-3 mins, turn off the saute feature

Top veggies with coated beef shanks, pour enough broth to cover (I like a mixture of chicken and beef broth for tastier result), and click stew options

That's it 😊
