Easy Dinner Recipe: Protein Packed Seasoned Rice

Super snowing outside atm and super windy too. It's -25 C, cold and yucky. Luckily no school today, YAY.....yet, am up already, and it's only 6 AM. Meh 😅

I was so hoping, knowing that no school today, I'd get to sleep in, but nope. Was a rough night, waking up every hourly, and wide awake before 6 earlier.

My oldest always seems to get upset tummy everytime he gets popcorn from thr theater' concession, and even though I suggested getting pretzels instead (yesterday eve), he chose popcorn, as popcorn is just perfect for movie, according to him. Alas, he woke me up twice for his hurting tummy, last night. Poor babe, not listening to momma 🥴

Today's recipe is so simple to make and will give you tasty meal, no hassle.

200 g lean ground beef
200 g ground chicken
5 garlic
2 tbsp unsalted butter
2 c rice
1 lemongrass
2 kafir lime leaves
1 garlic
1/2 c frozen mixed veggies
1 tbsp chicken bouillon powder
1-2 tsp sesame oil
Enough water

Slice 5 garlic thinly, set aside

Melt butter, brown ground beef and ground chicken, then stir in sliced garlic, season a little with chicken bouillon powder

Meanwhile, rinse clean rice in rice cooker pot, add in kafir lime leaves, 1 garlic that is either bruised, chopped, diced, or sliced, with 1 tbsp chicken bouillon powder

Once meat are cooked through, dump the whole into rice cooker pot, and add in frozen veggies

Pour water, enough to cover everything

Stir in chicken bouillon powder and sesame oil to taste, then cook rice according to your rice cooker options.

Once cooked, fluff the rice, serve and enjoy 😉
