No Dye Red Velvet Dollops

Good Morning!

Snowed all night long. Meh. I haven't seen any deer lately though, which is interesting, as they've been visiting almost daily, but not for the past one week now, and the weather was nice! Not freezing cold nor snowing, yet no deer. Interesting indeed.

I have a very easy soft cookies recipe to share this morning. I know they aren't bright red, as I prefer to use beetroot powder for the dye, instead food coloring. You are more than welcome to use food coloring, if you like. However, just in case you didn't know, the traditional velvet cake or cookies, only used cocoa powder, no coloring 😊

2.5 c strong baker's flour
1 tsp BSoda
A pinch of salt
2 tsp cocoa powder
1-2 tsp beetroot powder

2 eggs
1/2 c peanut oil
1/4 c yogurt
1/4 c sugar (may have missed mentioning it)
3 tsp vanilla essence
2 tbsp packed dark brown sugar

Nutella for topping

Mix dry ingredients in a bowl.

In a food processor, mix eggs, oil, sugars, yogurt and vanilla essence

Pour wet mixture into dry mixture, mix until completely combined

Drop by a tablespoon or a cookie scoop, top with a dollop Nutella on each

Bake for 8-12 mins on preheated 350 F

Cool on rack and enjoy!

(Nutella will firm up as cooled down completely)
