Spiced Beef and Rice Pilaf (Nasi Kebuli)

Hi Friends!

For the 1st recipe share of 2025, here is a niche rice pilaf recipe from Indonesia, Nasi Kebuli 😍 My favorite!

You can use beef, goat, lamb, rice, or none of those proteins, just the rice, and this fragrant rice would still be tasty and yummy 😋

I used Instant Pot, but you can use rice cooker. With IP, it takes only 12 minutes to cook from raw rice to fully cooked btw!

1 tsp fennel seeds
1/2 tsp cloves
4 star anise
1 cinnamon sticks
1 tbsp white cardamom (kapol), crushed
3 green cardamom (kapulaga), leave whole or crush
2 black cardamom, leave whole
1 nutmeg, grate half of it, leave the other half whole or crushed
A thumb of ginger, peel and slice

2 chilies
6 garlic
1/2 of a large onion
1/4 c beef broth

2 1/2 c basmati rice
500 g beef cubes
2 tbsp ghee (minyak samin)
1 1/2 - 1 3/4 c beef broth
1 c whole milk

Rinse the rice, set to side

In a food processor, turn garlic onion chilies and broth into fine paste, set aside

Toast the spices on instant pot, saute option

Stir in beef cubes, until coated with spices, cook to brown the beef

Add in paste, mix, followed with rinsed rice, stir

Add in ginger and cinnamon sticks, followed with ghee, broth, and milk, stir to combine

Season, stir

Turn off saute, add in raisins, cover with lid, turn on rice option (12 mins)

Release steam, take off lid, stir in more raisins, and rice is ready to be served 😊
